My favorite SANDWICH! :)

I'll start by posting one of my own that I always get recipe requests for:


Tilapia Scampi 
with Pasta, Family Style 

10 Tilapia Fillets, fresh or frozen 
6 tablespoons Butter
1/4 cup Olive Oil
Seasonings: 1/4 tsp each 
     Parsley, Basil, Garlic Powder, Minced Onion, Salt, Pepper
1/4 Seasoned Bread Crumbs
6 Cloves crushed Garlic
1/2 cup White wine ( I used a Chardonnay )
1/4 cup Lemon Juice (fresh or bottled) 
1 pkg spaghetti, linguine or vermicelli pasta

Place the fillets on a baking sheet and set aside to make the sauce. (mine were frozen)


At low heat, add the oil to a saucepan, then butter to melt. Add seasonings and keep heating low to allow the seasonings to blend in the oil mix. 




In a small ramekin or bowl, mix bread crumbs with 1 tablespoon of the seasoned oil and butter mix. Set aside. 


 Crush and mince garlic and add to oil and butter sauce. Once the garlic is cooked in, stir in the wine and lemon juice. Allow flavors to blend in for about five minutes on low heat. 




Start cooking the pasta according to package instructions.




Brush on the sauce to coat both sides of the fillets. Broil on low for 6 minutes. Turning over to broil the other side for 4 minutes. Remove from broiler, sprinkle the seasoned bread crumbs over the fillets and return to the broiler for about 1 minute or until crumbs are toasted brown. 







Toss the remaining sauce into the pasta. Then plate it with the fillets and your favorite green veggie. (I prefer lemon spinach but the family wanted peas.)

Time to eat! 



Little Pasta Tips:
- For pasta water add a tablespoon of olive oil and a good dash of sea salt to keep pasta from sticking.
-Warm your pasta serving bowl or plates to keep the pasta from getting cold too fast. 
- Preserve your left over plain pasta in serving sizes by dashing it with salt and mixing thoroughly in freezer bags and freeze until needed. To re-use, put the bag in boiling water to re-heat.

    1. I'm lucky that my family likes fish. I change the flavors according to what kind we have, ie a creamy dill with salmon, lemon pepper with pollock or cod, but they like garlic best. With this particular recipe, there are rarely leftovers. We really should eat more salmon but don't. I'm scouring all of our cooking friends for a good salmon recipe. I hope one shows up here. :)
